Grilled Lamb Burger with Moroccan Spices

3 lbs ground lamb
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
½ teaspoon ground cinnamon
½ teaspoon ground black pepper
1 tablespoons kosher salt
2 tablespoons fresh parsley, chopped

Pickled red onion & cucumber

1 English cucumber, thinly sliced
1 medium red onion, thinly sliced into rounds
Juice of 3 limes
½ teaspoon of sea salt

Harissa Mayaonnaise

1 teaspoon of harissa chile paste
½ cup mayonnaise

Burger Garnishes

6 burger buns
Lettuce leaves
2 tomatoes
6 oz of blue cheese

Roasted Potato Salad

2 lbs Fingerling potatoes, cut lengthwise
3 tablespoons olive oil
1 teaspoon smoked paprika
2 teaspoons sea salt
½ teaspoon ground white pepper

1 tablespoon fresh chives, chopped
1 tablespoon fresh tarragon leaves, chopped


Serves 6
Prep Time: 20 minutes
Cook Time: 25 minutes

Combine all spices and add to lamb, use hands to mix until well combined.

Portion lamb mixture into 8 ounces balls and shape into 6 patties.

Pickled red onion & cucumber
Combine all ingredients for pickled veggies and macerate for 30 – 60 minutes. Reserve until needed.

Harissa mayonnaise
Combine ingredients for Harissa mayonnaise and reserve until needed.

Roasted Potato Salad
In a bowl, combine potatoes, olive oil, paprika, salt and pepper. Toss well until all ingredients are combine.

Place potatoes on a roasting tray and roast at 325-degrees for 20 to 25 minutes until lightly brown and tender. Top with chives and tarragon before serving.

Grill burger patties (to desired doneness), place cheese on top to allow it to slightly melt.

Add harissa mayonnaise to both sides of  burger bun, add lettuce, tomatoes, pickled onion-cucumber, and lamb patties. 

Add roasted potato salad and enjoy!
