Zesty Crab Cucumber Bites

4 oz fresh Dungeness crab meat (bought cleaned and cooked)
Zest of 1 lime
Zest of 1 orange
1 teaspoon fresh tarragon, chopped
1 tablespoon mayonnaise
½ teaspoon Dijon mustard
1 large English cucumber (or 2 medium-size)
12 small pieces of orange for garnish
Combine crab, lime and orange zest, tarragon, mayonnaise, and mustard in a small mixing bowl
Using a hand spatula gently fold ingredients until well combined. Store in refrigerator until needed
For The Cucumber Bites
Remove cucumber skin using vegetable peeler. Cut cucumber into 1-inch slices.
If you like the slices to a round shape, cut each cucumber slice with a round cookie cutter to a desired diameter.
Using a small melon baller, scoop out most of the inside of the cucumber bites. Leave walls and thick portion of bottom intact.
Fill each cucumber cup with crab mix and garnish with a piece of orange
Refrigerate until ready to serve. Enjoy!
