Monthly Wine Spotlight - Provence

 

Each month, we pick a featured wine and our kitchen prepares a dish to create a perfect pairing recipe!

Spiced Baby Chicken with Roasted Vegetable Wild Rice
Garnished with Ginger Tangerine Vinaigrette
(Yield: 4 ppl)

Ingredients           Amount

FOR ROASTED VEGETABLE WILD RICE
•  Black wild rice
•  Brown short grain rice

 


•  ½ cup
•  ½ cup

Method

Cook (parboil) rices separately in 4 cups of boiling water each until tender/slightly al dente.
Strain excess water, but do not rinse. Set aside to cool.

• Butternut squash, peeled, seeded & diced
• Medium parsnips, peeled & diced
• Medium carrot, peeled & diced
• Golden beets, peeled & diced
• Olive oil
• Salt & pepper

Method

In a medium size bowl, coat all vegetables lightly in olive oil; season with salt & pepper to taste.
On a baking sheet at 400 degrees F, roast until lightly brown and tender, Approx.. 10-15 min, stirring halfway through.

Method

Sautee and set aside.


Ingredients           Amount

• Flat leaf parsley, finely chopped
• Fresh thyme, finely chopped
• Juice of 1 lemon
• Chicken stock
• Unsalted butter, melted
• Kosher salt
• Fresh ground black pepper
• Apple cider vinegar

Method

Combine ingredients above with sautéed onion and roasted vegetables. Line an 8.5 x 11 baking dish with butter.
Transfer ingredients from bowl into dish, cover with foil, and heat at 350 degrees F for 10 min.

SPICED BABY CHICKEN
• Chili powder, New Mexican
• Chili powder, Californian
• Paprika
• Toasted and ground cumin
• Toasted and ground coriander
• Ground cloves
• Cinnamon
• Nutmeg
• Cayenne pepper
• Garlic powder
• Onion powder
• Ground white pepper
• Kosher salt
• Ground black pepper
• Baby chickens, halved

Method

Combine spices to create mixture. Apply spice mix liberally to chicken, skin side up. Transfer to a roasting rack on top of a baking sheet. Bake at 375 degrees F until internal temperature is 185 degrees F. (Approx. 15 min.)

**Cooking times will vary based on chicken size. To check: Clear juices will run out of the chicken into the baking tray, or use a paring knife to enter chicken at thick part (dark meat). No blood should appear.

GINGER TANGERINE VINAIGRETTE
• 1 tbsp. peeled and minced ginger
• ¼ tsp. peeled and finely minced lemon grass
• 1 tsp. finely minced shallot
• Blood oranges, juiced, strained, reduced to ¼ volume over medium heat, then cooled
• Sesame oil
• Rice wine vinegar
• Soy sauce
• Honey
• Granulated sugar
• Finely chopped mint
• Finely chopped cilantro
• Extra virgin olive oil
• Salt and pepper

Method

Combine all ingredients except for olive oil and herbs. Gradually whisk olive oil into ingredient mixture.
Add herbs. Salt and pepper to taste (~1/2 tsp. salt, ½ tsp. fresh ground black pepper). Use as garnish or can be used as dressing for any kind of greens to begin the meal.
