Peju Carnival with Peach Salad

Peach Salad
(Yield: 1-2 ppl)

Amount           Ingredients
•   8 oz.  
•   6 
•   4 oz.  
•   3 tsp. 
•   4 tsp. 
•   4 oz. 
•   freshly ground black pepper to taste
•   coarse sea salt to taste
•   edible flowers to garnish
 

burrata cheese
individual vine ripened peaches (approx. 1 lb.)
prosciutto
aged balsamic vinegar
extra virgin olive oil
wild arugula


Method

Preheat grill. Wipe down peaches using a damp towel, slice in half, and brush with olive oil. Grill halved peaches for approximately 1 minute (grill marks OK).  Toss arugula with olive oil and balsamic vinegar in a small bowl and season with salt and ground pepper.  Place burrata cheese in the center of a serving plate and arrange dressed arugula and peaches (grilled side up) around it. Drizzle salad with aged balsamic vinegar and garnish with edible flowers. 
Serve with a glass of chilled Carnival.  Buon Appetito!
