Pumpkin Spice Cupcakes

For the Cupcakes

Preheat oven to 350 degrees. Prepare muffing tins with paper liners. Mix flour, pumpkin pie spice, baking powder, baking soda, salt and cinnamon in a large bowl and set aside.

In a separate bowl, combine pumpkin puree, sugar, brown sugar, butter and eggs and mix well. Fold in dry ingredient mixture. Scoop into prepared muffin tins, filling 3/4 full. Bake 18-20 minutes or until toothpick comes out clean. Allow to cool while you prepare the frosting.

For the Frosting

Beat butter and cream cheese until light and fluffy. Add powdered sugar slowly until fluffy. Beat in vanilla and cinnamon. If necessary, add more powdered sugar until frosting holds its shape. 

Frost cupcakes and top with a sprinkle of cinnamon if desired.

  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup pumkin puree
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed

For the Frosting

  • 6 tbsp butter, softened
  • 4 oz cream cheese, softened
  • 2 cups powdered sugar (more as needed)
  • 1/2 tsp vanilla
  • 1 1/2 tsp cinnamon
