Carnival Pink Cupcakes

For the Cupcakes

Preheat oven to 350 degrees. Combine cake mix with water, Carnival Pink, butter, eggs and food coloring. After mixed, fill muffin tins 2/3 to the top. Bake for 10-15 minutes or until toothpick comes out clean. Let cool completely. With a melon baller, scoop out a small portion of the cupcake. Place jam in a decorating bag and fill hole in the cupcake.

For the Frosting

With a mixer, beat powdered sugar, butter and salt until well blended. Mix in 1/3 cup wine. If frosting is too thick, beat in more wine a few drops at a time until desired consistency is reached. Frost cupcakes and top with fresh raspberries.

  • 1  box of white cake mix
  • 3/4 cup water
  • 1/2 cup Carnival Pink 
  • 1/3 cup butter
  • 3 eggs
  • Red food coloring (optional)
  • Filling - 3/4 cup raspberry jam

For the Frosting

  • 6 cups powdered sugar
  • 1/2 cup butter
  • 1/8 tsp salt
  • 1/3 cup Carnival Pink
