Ingredients   Amount
• Blackberries
• Bakers Sugar
• Lemon Grass
• Peju Zinfandel
• Peju Zinfandel
  4 pints
1 cup
1 pint
550 ml


  1. Combine blackberries, sugar, Zinfandel and lemon grass in small sauce pot and cook till temperature reaches 225°F.
  2. Remove lemon grass and purée in food processor.
  3. Strain through a fine chinois and add remaining bottle of Zinfandel to mixture.
  4. Chill for at least 2-3 hours.
